If you want a bowl of comfort, simmer up this lush, creamy pudding. As the rice cooks, it absorbs the water from the milk, and the starches thicken the remaining rich milk to a creamy sauce. Raisins are classic for this, but you can also use other dried fruit, like dried blueberries, apricots, cherries, whatever you like best.
INGREDIENTS
1 cup arborio rice
4 cups whole milk, approximately
1/2 cup sugar
3/4 teaspoon orange zest
1 teaspoon vanilla
1/2 cup raisins
1/4 teaspoon salt
PREPARATION
In a medium, heavy bottomed saucepan, combine the rice, milk, sugar, zest, vanilla and salt. Over medium heat, stir until the mixture starts to bubble. Reduce the heat to medium low, a very gentle simmer, and stir often as the rice cooks. Cook for 30-35 minutes, keep stirring until the rice is tender and creamy. Serve warm or cold.
